He was originally drafted by the Denver Broncos in the sixth round of the 2006 NFL Draft. He played college football at Minnesota At Minnesota, he was a four-year starter. As a senior, he was awarded the Outland Trophy, which is given to college football's best interior lineman, as well as the Dave Rimington Trophy, awarded to college football's top center. A Bismarck, North Dakota native, Eslinger was also two-time Associated Press All-American (2003, 2005) and a three-time First Team All-Big Ten performer (2003, 2004, 2005). Eslinger was projected to be a second- or third-round pick in the 2006 NFL Draft, but was chosen in the sixth round (198th overall) by the Broncos.
