Jeremy Mincey (born December 14, 1983 in Statesboro, Georgia) is an American football defensive end for the Jacksonville Jaguars of the National Football League. He was drafted by the New England Patriots in the sixth round of the 2006 NFL Draft. He played college football at Florida.

He attended Statesboro High School (Ga.), where he ettered two years in football and played on the basketball team as a sophomore before trying out for the football squad.
Mincey spent final two seasons at the University of Florida after transferring from Butler County Community College (Kansas). He started all 24 games played for the Gators and Earned Second-team All-SEC honors as a senior as he ranked fourth on the team with 62 tackles (31 solo) and second with 10.5 tackles for loss. Earned degree in recreation and tourism.
He was selected in sixth round (191st overall) by New England in the 2006 NFL Draft.
