Jeffcoat played high school football at Matawan Regional High School in Aberdeen Township, New Jersey. then played college football for Arizona State University, where he made the All-Pac-10 Conference team in 1982. He was drafted in the first round (23rd overall) of the 1983 NFL Draft by the Dallas Cowboys. Jeffcoat was a key component of the Cowboys defense, where he teamed for most of his career with Ed "Too Tall" Jones. He is tied with Bob Lilly for the team record for most sacks in a game (five), leading the team in sacks in 1986 and 1992.
