Joe would play for the St. Thomas Stars Jr. B hockey club of St. Thomas, Ontario, Canada before moving on to the Jr. A level. Thornton played major junior hockey in the Ontario Hockey League (OHL) with the Sault Ste. Marie Greyhounds for two seasons, beginning in 1995–96.
